Free Fatty Acids dry fruit
Acidity value of a fat is determined by the quantity of free fats derived by the hydrolytic rancidity of the triglycerides. This alteration happens when the alimentary fats are not stored or treated correctly. Hence, the chemical test for determining the acidity value of oils extracted from dry fruit is a fundamental index of the genuineness of the product. A bad conservation state of dry fruit, for example in a wet room, determines fat hydrolysis and, as a consequence, the increment of the concentration of non-esterified fat and therefore of the total acidity.

Test principle
R-O-O-R peroxides oxidize Fe++ ions. The Fe+++ ions resulting from oxidation are grouped and form a red complex. Its colorimetric intensity, measured at 505 nm, is directly proportional to the concentration of peroxides in the sample. CDR innovative method simplifies and speeds up the standard procedure, because it enables the test to be carried with micro-quantities and to be applied to fats that are difficult to extract.
Sample
Oil extracted from dry fruit. CDR has developed an innovative system that can be used to perform a cold extyraction of oil using a press.
The system is pratical and quick. It uses very little quantities of dry fruit since only a micro quantity of sample oil is needed for the test. It does not need any solvent for the extraction.
Kit
The reagents are provided in sealed bags, each containing 10 test tubes. They have a 12 months duration, starting from the production date. Stocking requirements are described on the bag label.
Reagents do not contain dangerous solvents and are ready for use.
